This homemade tomato sauce recipe is so fresh and delicious! I use it as pasta sauce, pizza sauce, and used it in eggplant parmigiana this past weekend.

Ingredients:

1/4 cup extra virgin olive oil

3 lbs tomatoes

2 large garlic cloves, minced

1/2 teaspoon sea salt

Freshly ground pepper

1/4 dried oregano

1/4 res pepper flakes

6 sprigs basil

Good quality Parmesan cheese

Pasta: I love @cappellos almond flour pasta

Method:

Roughly chop tomatoes. Place tomatoes, salt & pepper in blender. Blend.

In a sauce pan over medium heat, add garlic and onion. Once sautéed, add tomatoes, salt, pepper, oregano, red pepper flakes.. Simmer on low for 15 min. Then add in basil, cheese and pasta. Season with more salt and pepper to taste. ENJOY!
