Oreccheitte Pasta
I’m hosting Christmas Dinner this year with Nick’s family and my family. On the menu…Pasta! This is hands down my favorite pasta dish to serve for guests. It’s easy and a crowd pleaser.
Ingredients
1.5 pounds Italian pork sausage
4 garlic cloves, chopped
1 shallot, sliced thinly
1 teaspoon red pepper flake
1 fennel bulb, cored, quartered and thinly sliced
1/2 cup chicken stock
1 bunch lacinato kale, chopped
1 pound dried orecchiette pasta
Olive oil
Salt & Pepper
Parmigiano, grated
Method
In a large skillet, heat oil over medium heat. Add the sausage to the skillet, stirring and breaking up the mean until browned. Remove the sausage to a plate.
In the same skillet, add the garlic, saute for until light golden. Add the shallot and cook for 2 more minutes. Add in the red pepper flakes, cook for about 30 seconds. Add the fennel and salt, saute until fennel has softened, about 3 minutes. Add the stock and cook for a few more minutes. Add in the kale.
Bring a large pot of salted water to a boil. Add in the pasta. Cook according to the package.
Drain the pasta, making sure to reserve 1 cup of water. Add the pasta to the skillet and add back in the sausage. If pasta is dry, add in the reserved pasta water…1/4 cup at a time.
Grate fresh cheese over pasta and fresh ground pepper. Serve immediately….ENJOY!
