Chicken Noodle Soup
Back home and back in the kitchen. These freezing temps call for warm and cozy soup. Since Thanksgiving is approaching you could make this dish with leftover turkey as well….ENJOY!
Ingredients
1 cup chicken cooked, I used left over from my previous recipe (whole roasted chicken)
1 bunch carrots, diced
1 bunch celery, chopped
1 large onion, diced
1 large parsnip, diced
6 sprigs fresh thyme
6 cloves garlic, chopped
32ox bone broth; kettle and fire is a great option. I used @farmersdaughterscafe.
Salt & pepper
Pasta of choice. I used Banza chickpea pasta
Pecorino grated cheese
Parsley, for topping
Method
In a large pot, heat olive oil. Add the garlic and onion. Sauté until fragrant. Place the vegetable into the pot, with herbs, cook for 10 min. Add in chicken and broth. Bring to a boil, add in pasta, them simmer for 30 minutes. Serve hot with parsley and cheese.
