Healthy Chicken Noodle Soup
Last week I made a super simple, healthy, and delicious chicken noodle soup. Lately, I have loved using cabbage as noodles, once they cook down their texture is so similar. This is a great recipe to help with those winter colds or just to keep your family warm on those cold winter nights. Enjoy!
Ingredients
Roasted chicken (I buy a rotisserie to save time)
1 large carrot chopped
2 large celery sticks chopped
1 head of green cabbage
2 cloves garlic grated
1 large yellow onion chopped
4 cups bone broth, veggie broth, or chicken broth (bone broth is really the secret ingredient)
1 tsp Cumin
1 tsp red pepper flakes (optional)
Pink Himalayan Sea Salt
Fresh Ground Pepper
3 Sage Leaves
Chopped Parsley for garnish
Directions
In a large Dutch oven (or large pot with a lid), heat olive oil over medium heat. Add chopped onion, garlic, and large pinch of sea salt. Cook until translucent. Add chopped carrot, celery, and sliced cabbage. Add sea salt, pepper, and cumin. Cook for a few minutes. Then add in bone broth, chicken, sage leave. Bring to a boil, then cook on low heat for 40 minutes. Serve in a bowl with fresh parsley, black pepper, and a drizzle of olive oil.
