Gwyneth’s Cauliflower Couscous

I love cauliflower, period. This diverse veggie can turn any of my carb favorites into delicious comfort food…mashed potatoes, rice, pizza crust, and so much more. Gwyneth Paltrow’s cauliflower rice is a crowd-pleaser, and my go-to for any meal. Here is my twist on her delicious recipe. I love to serve this dish with fish, chicken, or use it as rice substitute in any Asian dish.

Ingredients

  • Serves 2

  •  1 head cauliflower, roughly broken into florets

  • 1 teaspoon grape seed oil, or any natural oil

  • 2 teaspoons toasted sesame oil

  • 1 cup diced zucchini

  • 2 teaspoons very chopped ginger, or I used a grater

  • 1 garlic clove, chopped or use a greater

  • 2 scallions, sliced

  • 1 cup shredded kale

  • 1 tablespoon coconut aminos

  • 1 tablespoon wheat free tamari

  • salt & pepper to taste

 Directions

  1. Place cauliflower in a food processor, pulse until cauliflower looks like quinoa or couscous.

  2. Heat large skillet heat grape seeds oil and sesame oil on med-high heat. Add zucchini and cook until brown, about 2 minutes.

  3. Add ginger, garlic to the pan, followed by kale and cauliflower. Sauté for 2 to 3 minutes. Off the heat, add in the liquid aminos, tamari, and s&p.
