Crispy Artichokes
Ingredients
Serves 4
2 artichokes
4 garlic cloves minced
2 tablespoons olive oil
Juice of 1 lemon
Sea Salt
Method
Preheat oven to 450
Quarter each artichoke
In a large pot, boil salted water
Once water is boiling add artichokes and boil for 20 minutes
While boiling, mix lemon juice, garlic, olive oil and sea salt in a bowl
Strain artichokes, place on baking sheet
Spoon mixture over artichokes, add more olive oil and salt if needed
Roast for 15-20 minutes
Pointers
The longer the artichokes boil the better, you want them very tender.
