Crispy Artichokes

 

Ingredients

Serves 4

  • 2 artichokes

  • 4 garlic cloves minced

  • 2 tablespoons olive oil

  • Juice of 1 lemon

  • Sea Salt

Method

  1. Preheat oven to 450

  2. Quarter each artichoke

  3. In a large pot, boil salted water

  4. Once water is boiling add artichokes and boil for 20 minutes

  5. While boiling, mix lemon juice, garlic, olive oil and sea salt in a bowl

  6. Strain artichokes, place on baking sheet

  7. Spoon mixture over artichokes, add more olive oil and salt if needed

  8. Roast for 15-20 minutes

Pointers

The longer the artichokes boil the better, you want them very tender.
