Best Spicy Linguini
I love this pasta recipe! Let’s get real, I just love pasta. However, I try not to make it a weekly indulgence. This recipe is made with brown rice fettuccini and no cheese, so it is actually pretty healthy. Plus, it is sooooo easy to make!
Ingredients:
1 lbs. Brown Rice Fettuccini (Cadia is my favorite brand, however, any kind of gluten-free, brown rice noodle will be good)
2 TBSP red pepper flakes
S&P (always Himalayan sea salt)
2 TBSP ghee
¼ cup chicken broth
½ cup to 1 cup pasta water
Oregano or any other herbs
Fresh basil
Lemon juice (half of a lemon)
4 TBSP olive oil
Cherry tomatoes, cut in half
Garlic, minced (I like to use a garlic grater, so much easier)
To Make:
Boil pasta water and add salt to the water. Add in the noodles, and while the noodles cook, heat a large pan with olive oil on med-high heat.
Add in garlic and onions, sauté until translucent. Stir in the ghee, red pepper flaked, herbs, chicken broth, lemon juice and s&p. Mix in a ½ cup of pasta water, add more if needed. Allow sauce to thicken. Then, add in the tomatoes and basil. Sauté for a few minutes. Once pasta is cooked, add it to the sauce. Stir in more s&p. Serve with a garnish of basil…easy peasy!
