Vegetable Potstickers

My kids LOVE potstickers. It’s always their go-to order at Asian restaurants. So I finally tried them at home, and they are the best thing ever! I always thought homemade potstickers sounded too daunting, but the truth is that they’re relatively easy, and make for an interactive cooking night with the family.

I made my potstickers filling out of veggies. If you are local, look for @rootcellars cabbage slaw mix, this saved me so much time. It’s essentially chopped green & red cabbage & carrots.

Method

Sesame Vegetable Potstickers

Ingredients:

  • 1 tablespoon sesame oil, divided

  • 1 cup mushrooms, finely chopped

  • 1 cup cabbage, thinly sliced

  • 1 cup carrots, grated

  • 1 tablespoon ginger, minced

  • 2 tablespoons soy sauce

  • 2 tablespoons chives, chopped

  • 1 tablespoon sesame seeds

  • 1 package dumpling wrappers

  • Water, for sealing

Instructions:

  • Prepare the Filling: Heat 1 tablespoon of sesame oil in a large skillet over medium-high heat. Add mushrooms, cabbage, carrots, and ginger. Cook, stirring occasionally, until vegetables have cooked down, about 5 minutes. Stir in soy sauce, chives, and sesame seeds. Cook for an additional 2-3 minutes until the liquid has evaporated. Remove from heat and let cool.

  • Assemble the Potstickers: Spoon 1 tablespoon of filling onto each dumpling wrapper. Brush water around the edge of the wrapper. Fold the dough over the filling to create a half-moon shape, pinching the edges to seal. Repeat with remaining wrappers.

  • Cook the Potstickers: Heat the remaining sesame oil in a large skillet over medium-high heat. Once hot, add the potstickers and cook until the bottoms are light golden brown, about 2-3 minutes. Pour 1/4 cup of water into the pan and immediately cover with a tight-fitting lid. Reduce heat to medium and let the dumplings steam for 3 minutes.

  • Prepare the Sauce: In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, sriracha (if using), and minced garlic.

  • Serve: Serve the potstickers immediately with the prepared sauce for dipping.
