Pregnancy Cravings
Pregnancy Craving!! Peanut butter is my soulmate. I have loved everything peanut butter since I was a little child. However, since becoming somewhat of a health nut (no pun intended), I have resorted to using almond butter instead due to the increased health benefits. But, the taste is definitely not! So, once I was pregnant, my primary craving was peanut butter. Peanut butter on celery, crackers, toast, in smoothies, and my favorite…the dark chocolate Justin Peanut Butter cups. Note to self, do not try the Justin Peanut Butter cups…they are addictive!
I was determined to make a healthy(ish) treat that involved peanut butter. These peanut butter protein bites are to die for, and you can substitute ingredients depending on what you are in the mood for. I think these little energy bites will be great to serve my little bambino when she is older.
Ingredients:
1 c peanut butter 1
1 c oats
1/3 c shredded coconut
1/2 c chocolate chips (I use dark chocolate chips)
6 Medjool dates, pitted (or 2 tbsp honey)
3 tbsp chia seeds
2 tbsp coconut oil
makes 8-9 bites
Directions:
Place ingredients into a food processor, blend everything up until a sticky mix form.
Roll the mixture into balls. Place them in the fridge or freezer to let them set for at least 20 minutes.
These will last a few weeks, but if you want them to last longer, or you don’t eat them all at once, like I do, then they freeze really well too.
