Aniston Salad

 
 

Spending extra time in the kitchen this snowy weekend. This is my favorite salad of all time, I pretty eat it everyday @thefarmersdaughterscafe. I once read that Jennifer Aniston ate this daily on the set of Friends and after recreating the salad at the cafe I see why the whole internet was obsessed. Here is our version.

Ingredients: Make 2-4 servings

1 cup quinoa, cooked

1 cup cucumber, chopped

1/2 cup parsley, finely chopped

1/2 cup mint, Finley chopped

1/3 cup red onion, finely chopped

1/2 cup pistachios

1 (15oz) can chickpeas, drained and rinsed

2 lemons, juiced

1 cup spinach, chopped

Olive Oil

Sea Salt & Fresh Pepper

Dressing

  • You can use any dressing you like. Here is my go-to

  • Shallot, lemon juice, olive oil, dijon, garlic, apple cider vinegar, salt and pepper.

Method:

  1. Cook the quinoa, according to the package. Pour onto platter to cool. I like to add olive oil, salt and pepper…then fluff.

  2. Prepare all other ingredients and place into a bowl. Add the quinoa and toss with dressing and lemon juice. Top with avocado or protein of choice. I love 2 hard boiled eggs or tuna added to this salad.
