Winter Soup
Ingredients
2 lbs ground beef or turkey (I used 2 lbs you could do just 1 lb)
1 bunch kale, chopped
2 tablespoons olive oil
2 carrots, chopped
1 cup green beans, chopped
1 onion, chopped
2 celery stalks, chopped
2 garlic cloves, chopped
1 can fire roasted tomatoes
1 package cauliflower rice, or use fresh (you can also use pasta)
20-30 oz bone broth
1 tbsp oregano
1 tsp paprika
1/2 tbsp Italian seasoning
Salt and pepper to taste
1 Parmesan rind + fresh parmesan or topping
1/4 up chopped fresh parsley
Method
In a large pot, sauté onion, garlic, carrots and celery in oil on high heat for 3-5 minutes.
Add in ground beef to brown, cook for about 10 minutes.
Add in all spices and tomatoes, cook for 2 minutes.
Add in bone broth, bring to a boil, add in green beans.
After boiling, bring to a simmer. Add in cauliflower, kale and parmesan rind.
Let simmer for 1-2 hours.
Once ready to serve add more parmesan and fresh parsley.
