Mediterranean Baked White Fish

 

We’ve been on a longevity kick at our house, reading and learning all about living great as we age. Fish is definitely on the approved list. This Mediterranean Roasted White Fish is simple and delicious.


Ingredients
1.5 pounds white fish such as halibut, cod, tilapia, etc. cut into fillets
1 pint cherry tomatoes, sliced in half
1/4 cup castelvetrano olives, sliced
1/3 onion, thinly sliced
3 garlic cloves, minced
2 big spoonfuls of capers, drained
2 big pinches of parsley, chopped
Olive oil
S&P
Oregano
Lemon

Method
1. Preheat oven to 425.
2. Add tomatoes, olives, onion, garlic, capers and parsley to baking dish. Top with 1.5 tbsp olive oil and salt and pepper. Toss to combine then spread mixture evenly onto your baking dish.
3. Place your fish over the tomato mixture, drizzle fish with olive oil, top with salt and pepper and oregano. Drizzle fish with lemon juice then pop it into the oven.
4. Roast for 20-25 mins, keeping an eye on it.
5. Serve in baking dish or move to a platter topping the fish with the tomato mixture and alll the juices. Garnish with parsley and one more big juicy squeeze of lemon.
