Busy Mom Peanut Butter Protein Balls

Ingredients

  • 1/4 cup honey (or date syrup or coconut syrup)

  • 1/2 cup natural drippy peanut butter (or sub almond butter)

  • 1 teaspoon vanilla extract

  • 1/3 cup protein powder of choice*

  • 1/3 cup flaxseed meal

  • 1/2 cup rolled oats (gluten free, if desired) -OPTIONAL

  • 1/2 teaspoon cinnamon

  • 1 tablespoon chia seeds

  • 1 tablespoon mini chocolate chips (vegan, if desired)

  • Optional

  • 1/4 cup unsweetened shredded coconut

Method

  1. Place peanut butter, honey, vanilla, protein powder, flaxseed meal, oats, cinnamon, and chia seeds in the bowl of a food processor.

  2. Pulse the ingredients together until they are well combined.

  3. Add chocolate chips (and coconut if desired) to the mixture and pulse a few more times to incorporate.

  4. Using a medium cookie scoop or your hands, roll the dough into 10 balls.

  5. Place the balls in an airtight container for storage.
