Busy Mom Peanut Butter Protein Balls
Ingredients
1/4 cup honey (or date syrup or coconut syrup)
1/2 cup natural drippy peanut butter (or sub almond butter)
1 teaspoon vanilla extract
1/3 cup protein powder of choice*
1/3 cup flaxseed meal
1/2 cup rolled oats (gluten free, if desired) -OPTIONAL
1/2 teaspoon cinnamon
1 tablespoon chia seeds
1 tablespoon mini chocolate chips (vegan, if desired)
Optional
1/4 cup unsweetened shredded coconut
Method
Place peanut butter, honey, vanilla, protein powder, flaxseed meal, oats, cinnamon, and chia seeds in the bowl of a food processor.
Pulse the ingredients together until they are well combined.
Add chocolate chips (and coconut if desired) to the mixture and pulse a few more times to incorporate.
Using a medium cookie scoop or your hands, roll the dough into 10 balls.
Place the balls in an airtight container for storage.
