Avocado & Egg Salad

Ingredients 

  • 2 hard-boiled pasture-raised eggs

  • 1 avocado

  • 1 dill pickle

  • 1-2 tbsp spicy brown mustard

  • 1-2 tbsp red onion

  • pinch of sea salt

  • dried or fresh dill

  • ground pepper

Instructions 

  • Dice the eggs (I use an egg slicer to make it quick and easy).

  • Finely chop the red onion and pickle, and cut the avocado into cubes.

  • Add all the ingredients to a bowl and mix to combine, mashing slightly to get your desired texture.

  • Serve with toast, crackers or veggies. Enjoy!
