Apple, Sausage and Goat Cheese Frittata

 

Livv and I like to make Breakfast for the Boys (aka dad and Henry) once a week. Here has been a favorite in our house.

Ingredients

  • 1 tbsp butter

  • 1 cup thinly sliced white onion

  • 1 clove garlic, minced

  • 1 cup thinly sliced sausage links

  • 1 1/2 cups thinly sliced apple (I use Honeycrisp)

  • 2 cup baby spinach

  • 10 medium eggs

  • 1/4 cup unsweetened full fat coconut milk, whole milk or heavy creamer here

  • 1/4 tsp kosher salt, or more to taste

  • 1 pinch black pepper

  • 2 tbsp crumbled goat cheese

Method

  1. Preheat oven to 350 degrees

  2. Heat butter in cast iron pan over medium heat. Add onions, garlic, and sausage to the skillet. Cook for 3-4 minutes.

  3. Add apples, and continue stirring and cooking for 3 minutes.

  4. Remove from heat and add in spinach to the skillet. Stir until wilted.

  5. In a large bowl, combine eggs, salt, pepper, milk and whisk until frothy.

  6. Pour egg mixture into skillet. Crumbled goat cheese over the top, then transfer to the oven.

  7. Cook for about 15 minutes. Remove from oven and let rest for 10 minutes.
