Picnic
I take picnic packing very seriously, and I've crafted recipes to match my enthusiasm. Whether you're on a road trip or seeking a scenic picnic spot, here's a few of my favorite recipes for fellow picnic enthusiasts.
In a recent video, we journeyed to the Flathead, a perfect spot for a quick and healthy lunch on the go. On this adventure, I featured my herby salad, chicken salad, and the ultimate chocolate chip cookies (with recipes coming this Friday).
For road trips, I prefer using mason jars. They make it simple for each person to enjoy their own jar of salad and chicken salad, ideal for eating while traveling.
Salad
-Gem lettuce
-Radish, chopped
-Herbs: tarragon, dill, chives (whatever you have)
-Pistachios
-Green olives
-Raw goat cheese
-Salt & pepper to taste.
-for the dressing I drizzled a little olive oil and lemon juice. Then once ready to eat, add the chicken salad to the herby salad.
Chicken Salad
Vinaigrette
-2/3 cup good quality olive oil
-1/4 cup champagne vinegar
-1 tsp dijon mustard
-1/2 a lemon zested and juiced
-1/2 teaspoon raw honey
-1 large garlic gloves, minced
-1 shallot, minced
-salt and pepper to taste
Chicken Salad
-1 rotisserie chicken
-1/2 cup celery, chopped
-1/3 cup fresh herbs, dill, parsley, chives.
-1/3 cup mayonnaise
-sea salt and pepper to taste
-optional - fresh lemon juice
Remove the chicken from the bone. Chop into small pieces. In a large mixing bowl whisk together the vinaigrette, then add the mayonnaise. Toss in the chicken with the celery, herbs and mix together.
