Greek! Lamb Meatballs and Greek Salad

Meatballs

Ingredients

  • 1/2 red onion, chopped finely

  • 1 pound ground meat (lamb, bison, beef)

  • 2 garlic cloves, minced

  • 1 egg

  • 1/2 cup parsley, chopped

  • 3 large mint leaves, chopped

  • 1 tbsp dried oregano

  • Olive oil

  • Salt and Pepper

    Method

  • Preheat oven to 400 degrees

  • Add all meatball ingredients into a bowl. Using your hands to mix well until fully combined.

    • Optional: Refrigerate for up to 1 hour, makes the meatballs easier to roll.

  • Line a baking sheet with parchment paper. Make meatballs into golf ball size balls.

  • Bake for 15-20 minutes. Half way through turn meatballs over.


Greek Salad

Ingredients

  • Cucumber, chopped

  • Tomato, chopped

  • Kalamata Olives

  • Artichokes (canned and chopped)

  • Red onion, sliced thinly

  • Feta cheese, chopped or grated

  • Lots of salt and pepper

Method

  • Combine all ingredients into a bowl. For dressing keeping it simple, drizzle good olive oil and a squeeze of lemon.

  • **We paired our meal with lentil pasta….pasta is always a good idea!
