Greek! Lamb Meatballs and Greek Salad
Meatballs
Ingredients
1/2 red onion, chopped finely
1 pound ground meat (lamb, bison, beef)
2 garlic cloves, minced
1 egg
1/2 cup parsley, chopped
3 large mint leaves, chopped
1 tbsp dried oregano
Olive oil
Salt and Pepper
Method
Preheat oven to 400 degrees
Add all meatball ingredients into a bowl. Using your hands to mix well until fully combined.
Optional: Refrigerate for up to 1 hour, makes the meatballs easier to roll.
Line a baking sheet with parchment paper. Make meatballs into golf ball size balls.
Bake for 15-20 minutes. Half way through turn meatballs over.
Greek Salad
Ingredients
Cucumber, chopped
Tomato, chopped
Kalamata Olives
Artichokes (canned and chopped)
Red onion, sliced thinly
Feta cheese, chopped or grated
Lots of salt and pepper
Method
Combine all ingredients into a bowl. For dressing keeping it simple, drizzle good olive oil and a squeeze of lemon.
