Chili served over Sweet Potatoes

Chili is one of my ABSOLUTE favorite fall/winter dishes. It’s hearty, flavorful and such an easy recipe to throw in the pot and serve a crowd-pleasing dinner. Now serve it over a sweet potato! Seriously so good!

Ingredients:

  • 1 cup celery, chopped 

  • 1 cup carrots, chopped

  • 1 medium onion, chopped

  • 2.5 lbs ground beef: Mine is from local from @primal

  • 2 cans black beans drained

  • 2 cans chili beans with sauce

  • 2 cups mild salsa (this is new for me and amazing!)

  • 3-4 Tbs chili powder

  • 1 tsp cumin

  • 2 tsp garlic powder

  • 1 large can crushed tomatoes

  • Sweet potatoes

  • Shredded cheddar cheese

Method

Sauté onions, carrots and celery until softened. Add ground beef and brown until no pink. Stir in all other ingredients and simmer for at least 30 mins to 1 hour. 

For the sweet potatoes, bake in oven at  400 F for 45- 1 hr. Split open then top with chili and cheese. Tip: I slice a few holes in my potatoes and cook for 5 min in the microwave (saves a lot of cooking time)
